Low Carb Taco Stuffed Peppers

Ingredients
- 2 Bell Peppers
- ⅓ Pound of Ground Beef
- ⅓ Cup of Mixed Cheese
- ¼ Cup of Onions
- ¼ Cup of Pre-mixed Tomatoes & Peppers
- ¼ Cup of Salsa
Instructions
- Cut the tops of both bell peppers and place in boiling water for about 3-5 minutes
- Saute beef, onions and salsa until they begin to lightly brown; add southwestern chipotle seasoning for a little taco spice
- Make sure to drain all fat from the skillet and then place even amount of mixture into each pepper
- Top both with cheese, tomatoes, peppers, and salt (more chipotle seasoning is always an option)
