Hello, The Low Carb Diet is a recipe blog created by me, Andres Regalado. It’s completely devoted to practical home cooking, product inspiration, and easy low carb recipes.
My Story
I’m a talkative average, early 20’s, fresh to adulthood hispanic dude, with brown eyes and hair and an allergy to all things dusty. I would describe myself as ambitious, pretty creative and rather funny, but.. not hilarious. I love to bake and I love to watch my fair share of recorded shows, like ABC’s Revenge and Syfy’s Being Human (I know I’m a nerd). I also enjoy the beach, my friends swear I’m half fish.
As a high school graduate, I wasn’t so sure what I wanted to do or who I wanted to be. However, I did know I needed a job and I needed it sooner than later. I couldn’t find a job to save my life, considering that the economy was still in a bit of a rut.
Finally, I sat myself down and really thought of what I could do and what I’d be good at doing it.. Alas! I remembered a local cupcake spot, where I had been going nearly weekly for my favorite flavors. I shared my interest with the owner, who knew and loved me and within a week I was hired! It wasn’t long before I moved from an associate to manager, and then full on ambassador.
It was at this cupcake shop, that I really learned my love for food, and it’s infinite possibilities. But, it was here that I gained nearly 50 pounds from trying over 200+ different cupcake flavors, and randomly snacking throughout the day. I can’t blame it on them, I honestly couldn’t control myself. Towards the end I was snacking on about 2-5 cupcakes PER DAY. Once I was hitting the size XL, I knew it was time for a change. I left the company and position I loved and decided to focus on other things, mainly being my health and weight loss.
I tried several different diets, but nothing was working.. I was sure that I’d never loose the weight. Low calorie did nothing for me, even when holding out to only 300-500 calories a day.. I know, I was crazy and desperate! No need for negative comments on that, I know it was unhealthy and pretty terrible. But it was at this point I kept looking for diets, and came across the Atkins diet. It didn’t work perfectly for me, so I tweaked it a bit, still low carb though. It was with this change that I was able to loose 30 pounds within the first 2-3 months.
Since then I have been able to lose the rest of the weight I gained, plus an extra 5.. surprisingly! I honestly couldn’t be happier with my body. It’s not perfect by any means! I don’t have washboard abs, I’m not stick thin. But I’m fine with that. I’m healthy and happy! That’s what my goal was.
Currently I’m attending a private University in Florida, where I intend on double majoring. During the meantime, I analyze and market websites and digital campaigns for my current employer and any clients that may come my way. Not many find these types of duties to be entertaining. But I find that once I get the hang of the website’s tools, it’s pretty amazing seeing how things flow and grow. My main focus is to assist with user experience and interests, considering that I feel it’s one of the most important factors in any website or blog.
About the Blog
In order to keep the weight off I had to stop thinking of low carb as a diet, but a life style. While rummaging through blogs and websites I noticed there just wasn’t anywhere as many low carb recipes and ideas as there were for “regular” folks. This is where the inspiration for my blog came.
Since 2013 The Low Carb Diet has been devouring the internet one bite and blog post at a time. I foresee many more years and success for The Low Carb Diet in the near and far future. I know from the high volume of emails I receive weekly and the upwards of 26,000 devoted friends, that The Low Carb Diet has been successful at helping others succeed and enjoy low carb.
My intentions are to true and simple, share my recipes to allow others like you and I to THRIVE in low carb instead of just survive.
I say what I mean and mean what I say. Seriously!
