Low Carb Taco Stuffed Peppers
Recipe type: Side Dish
  • 2 Bell Peppers
  • ⅓ Pound of Ground Beef
  • ⅓ Cup of Mixed Cheese
  • ¼ Cup of Onions
  • ¼ Cup of Pre-mixed Tomatoes & Peppers
  • ¼ Cup of Salsa
  1. Cut the tops of both bell peppers and place in boiling water for about 3-5 minutes
  2. Saute beef, onions and salsa until they begin to lightly brown; add southwestern chipotle seasoning for a little taco spice
  3. Make sure to drain all fat from the skillet and then place even amount of mixture into each pepper
  4. Top both with cheese, tomatoes, peppers, and salt (more chipotle seasoning is always an option)
