The second step in this recipe says to marinate the chicken and let it sit, but if you are in a rush just add the marinate and keep going! I would suggest to let it sit and marinate for more flavor!
Low Carb Chicken Fajitas

Ingredients
- 1lb of Chicken
- 12oz of Bell Peppers and Onions
- 2 Garlic Cloves Crushed
- 1 Lime
- ½ Teaspoon of Salt
- ½ Teaspoon of Pepper
- Toppings (Optional):
- Salsa
- Sour Cream
- Mixed Cheese
- Water
Instructions
- Cut chicken into strips and separately chop bell peppers and onions into strips
- Combine crushed garlic with lime juice. Add sliced chicken to mixture and allow to marinate for 1-2 hours
- Pre-heat a large saute pan to medium temperature, then add sliced chicken. Cook for about 3-5 minutes or until chicken begins to slightly blacken
- Add bell peppers and onions, seasonings, and 2 tablespoons of water (water makes it steam and allows the mixture to not dry out)
- Stir consistently and once is gone, add another 2 tablespoons or so. Make sure to wait until the vegetables are slightly blackened and are semi soft
- Serve with traditional condiments such as the sour cream and mixed cheese, ENJOY!
