October is one of my favorite months. It brings cooler weather and comfort food. And who doesn’t love some tasty comfort food? I know I sure do. That’s what makes this delicious low carb meatloaf recipe so perfect.
This extra delicious low carb meatloaf is a comfort food classic, with extra beef and protein. I promise that this isn’t your mom’s typical meatloaf but after you take a bite into this saucy, beefy, flavorful dish, youl’ll never miss meatloaf again.
Serves perfectly with our delicious Low Carb Mashed Potatoes.

Low Carb Meatloaf
Ingredients
- 1 1/2 lbs ground beef
- 1/3 cup red onions chopped
- 1/2 cup pork rinds crushed
- 1/3 teaspoon ground pepper
- 2 teaspoons minced garlic
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons ground mustard
- 1 1/2 teaspoons chili powder
- 4 oz tomato sauce
- 2 eggs
- 1/3 cup ketchup
Instructions

Preheat oven to 375.

In a large bowl, combine all ingredients but ketchup.

Place mixture in a 5x9 inch loaf pan. Press and shape into a loaf shape.

Bake for 45-50 minutes or until reaching desired texture. Let cool for 2-5 minutes.

Spread ketchup on loaf. Cut and serve or remove from loaf pan and then cut and serve.

I have made this recipe a couple of times, its very good. The only question I have is I use Heinz Reduce Sugar Ketchup, I was wondering if you used the same to calculate the net carbs? Or did you use regular ketchup?

What a delicious meatloaf! LOADED with flavor! I’ve been on the Omni drops HCG diet for 48 days, just started phase 3, low-carb. This meatloaf was out-of-this-world! It’s hard to find a (home) cook who’s not afraid to use spices and seasonings. This one did it for me! My husband also enjoyed it. Guinan, we apologize for the delay in our response. We actually use regular ketchup, but bear in mind that the carb and sugar content varies from brand to brand. Heinz has a line of less sugar products called “Simply Heinz” that you may want to look for.

You can make your own ketchup with tomato paste, vinegar (any kind you like), onion powder, garlic powder, a little bit of mustard, and salt. Add just enough vinegar to make it taste right, then thin it down with a little boiled water, if it’s still too thick.

I made this meatloaf tonight using grass-fed ground beef. I followed the recipe to the letter, except I didn’t want to mess with saving the other half can of tomato sauce, so added seasonings to it and used it along with some ketchup. It turned out great. My hubby and I are on a diet and are trying to eliminate all artificial sweeteners and grains. I’ve lost 5 lbs. in the last week by cooking and baking on a low-carb level. At this rate, I’ll be down to my goal weight by Mother’s Day. Thank you so much for this great recipe!

Atkins. Great recipe. Flavorful, filling. Doesn’t necessarily hold together as well as “traditional” meatloaf, but for all intents and purposes, this is a classic meatloaf recipe that you won’t regret making. Will definitely make again!

I am eating this meatloaf this very minute, and I feel compelled to comment. Fantastic!! I used an 8 oz can of tomato sauce, used half mixed in the meat, and the other half on top instead of using ketchup. This is wonderfully tasty and moist. I will make it often.

I made this today, used hot smoked paprika instead of the chili powder. My son bought the family size pack of Angus ground beef 5.45 lbs! So I made 4 mini and one 9×5 size. I put Heinz Reduced sugar ketchup on the minis and no ketchup on the bigger loaf. I did add old Bay seasoning since we like a little bit more salt. It’s delicious. Thanks for the recipe!

This was great! I used 1 lb ground beef, 1/2 lb italian sausage and skipped the ketchup. I just poured the other 4 oz of tomato sauce on top and baked. Delicious!

Awesome taste. I doubled the amount of crushed pork rinds the second time I made this recipe just to tighten it up. Also used 90/10 blend of ground beef as the 80/20 ground chuck I used first shrank the loaf considerably. Great recipe! Goes well served with cauliflower potatoes and roasted broccoli for a complete meal.

I could NOT stop eating this! I made it to meal prep my lunches, but next thing I knew, I’d eaten about 1/3 of it, one small slice at a time. I did make two changes, used 1 full cup of pork rinds and mixed half ketchup, half tomato sauce for the top. The flavor is superb, and I’m kind of a flavor profile snob.
