Low Carb Almond Cookies
Between you and I, I sweet addiction.. The very thought of having even the smallest treat each day gives me something to look forward to. I can usually make due with a little piece of dark chocolate but once the holidays starting rolling in I need bake goods. Better yet, I need cookies, low carb almond cookies.
Pale cream, vanilla frosted and topped with sliced almonds, these delectable almond cookies are sure to please and taste like nothing you’ve ever had before. The texture and consistency is by far the best I’ve ever had when making low carb cookies using almond flour.
This has to be my new go-to cookie recipe with my low carb chocolate chip cookies just pieces away at second place.
Make it at home
- Sweetener – Swerve Sweetener
- Almond Flour – Bob’s Red Mill Almond Flour
- Confectioners Sweetener – Swerve Sweetener Confectioners

Low Carb Almond Cookies
Ingredients
Cookie
- 1/2 Cup of Butter softened
- 2/3 Cup of Sweetener
- 2/3 Cup of Ricotta Cheese
- 2 Cups of Almond Flour
- 2 Teaspoons of Vanilla Extract
- 1 Teaspoon of Almond Extract
- 1 1/2 Teaspoons of Baking Powder
- 1 Egg
Topping
- 5 tablespoons almond milk
- 1/2 Cup Confectioners Sweetener
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup sliced almonds optional
Instructions

Preheat oven to 350 and grease large baking sheet.

Mix together butter, sweetener, eggs, ricotta cheese, and extracts

Add almond flour and mix until a dough like consistency forms

Place tablespoon size drops of cookie dough on cookie tray

Bake for 15 minutes or until golden

Let cookies cool while mixing together icing

For the icing, mix together almond ilk, confectioners style sweetener, vanilla extract and almond extract and then brush or drizzle on top of cookies

Optionally, top cookies with almonds

Thank you so much for the kind words, Gloria. Welcome to the low carb lifestyle, it surely has its share of difficulties but it’s all for the better in my opinion! With fun and creative recipes like these almond cookies, who’s going to miss non-low carb living anyways?
As for my ingredients.. I tend to feature certain ingredients and substitutions on the right side bar of my blog and I’m beginning to add specific ingreidnets to each blog post to help others like yourself. I’m lucky enough to have several essentials at my local grocery store, which seems to be rather low carb friendly. The more research I do the more stuff I see Amazon has to offer, for instance, heres the turkey pepperoni I use (and LOVE): Turkey Pepperoni.
I’ve also been working on a page thats specifically devoted to such essentials, not sure what to call it though: recommendations, substitutions, resources, ingredients, etc? I’d really love your opinion.

Hi Andres! I have tried Low-Carb eating several times, and my undoing is sweets, not bread or potatoes….just sweets. I find that if I have some sort of treat, low-carb is do-able. These almond cookies sound delicious and I cannot wait to make them. Thanks for the great recipes and your encouragement. I’ll let you know how mine turn out!

I wish someone came up with healthy low carb recipes without any “flour”!!

Can you substitute stevia or splenda for the swerve. Swerve isn’t easily accessible or affordable for me.

Yes, you should be fine with using another sweetener. I just suggest Swerve because I find it taste the best. Hope you enjoy the cookies, Edwin!
