Low Carb Almond Cookies

Ingredients

Cookie

  • 1/2 Cup of Butter softened
  • 2/3 Cup of Sweetener
  • 2/3 Cup of Ricotta Cheese
  • 2 Cups of Almond Flour
  • 2 Teaspoons of Vanilla Extract
  • 1 Teaspoon of Almond Extract
  • 1 1/2 Teaspoons of Baking Powder
  • 1 Egg

Topping

  • 5 tablespoons almond milk
  • 1/2 Cup Confectioners Sweetener
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup sliced almonds optional

Instructions

  1. Preheat oven to 350 and grease large baking sheet.
  2. Mix together butter, sweetener, eggs, ricotta cheese, and extracts
  3. Add almond flour and mix until a dough like consistency forms
  4. Place tablespoon size drops of cookie dough on cookie tray
  5. Bake for 15 minutes or until golden
  6. Let cookies cool while mixing together icing
  7. For the icing, mix together almond ilk, confectioners style sweetener, vanilla extract and almond extract and then brush or drizzle on top of cookies
  8. Optionally, top cookies with almonds
