Low Carb Raspberry Delite
Recipe type: Dessert
  • 2 Cups of Raspberries
  • 1 Cup of Heavy Whipping Cream
  • 1.5 Teaspoons of Vanilla Extract
  • 1 Teaspoon of Raspberry Extract (Optional)
  • Add sweetener (1/4 cup suggested)
  1. Blend raspberries with desired amount of sweetener to form a raspberry puree
  2. Whip heavy whipping cream with vanilla and raspberry extract until thick
  3. Mix in the raspberry puree with the whipping cream until the entire mixture is one solid color
  4. Scoop into dessert dishes and place in the fridge for 1-3 hours to set and thicken
  5. I then added a scoop of whip cream and a scoop of raspberries for garnish, but this is optional
Serving size: 1 dish (Recipe makes about 5 dishes)
