Low Carb Chocolate Truffles

Ingredients
  • 8 ounces unsweetened chocolate (finely chopped)
  • ½ cup heavy whipping cream
  • ½ cup sweetener
  • 1 teaspoon vanilla extract
  • Coating
  • 3 tablespoons coca powder
  • 2 tablespoons sweetener
Instructions
  1. In a saucepan bring the heavy whipping cream to a simmer, making sure that it doesn't start bubbling too much.
  2. Remove saucepan from heat, add sweetener and chocolate. Mix until smooth and then transfer to bowl to cool.
  3. Allow the mixture to cool in a mixing bowl, then referigerate for 1-2 hours (allows the mixture to thicken).
  4. Once cool, refrigerate until the chocolate mixture is firm enough to shape into balls, 1 to 2 hours. Using a spoon, scoop out teaspoon size chunks. Then roll the chunks in your hands to form balls (it will melt so try to do it quickly). Roll bolls in coating mixture. Refergerate until ready to serve.
