Bacon Salad with Avocado & Goat Cheese

  • 4 slices of bacon, cooked and chopped
  • 10 cups spinach, slightly chopped
  • ½ cup goat cheese, crumbled
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 avocado, chopped
  1. In a large bowl, combine spinach, cheese, avocado and bacon.
  2. Add the olive oil and seasonings to the salad and toss. Serve.
