Broccoli Cheese Quiche - Low Carb

  • 12 oz broccoli, chopped
  • 7 eggs
  • ½ cup heavy cream
  • 2 tablespoons almond flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon ground mustard
  • 1⅓ cup sharp Cheddar cheese
  • ½ cup red onions, chopped
  1. Preheat oven to 350. Spray cupcake or small muffin tin with non stick cooking spray and lightly flour the bottom.
  2. In a large bowl, whisk eggs, heavy cream, salt, pepper, and mustard. Stir in broccoli, onions and cheese.
  3. Pour into baking tin. Bake for 30-40 minutes or until a tooth pick (or knife) comes out clean.
Serving size: 1 serving (Total recipe makes 9 servings)
