Rice Pudding - Low Carb

Ingredients
  • ¾ cup cauliflower "rice"
  • 6 oz cream cheese
  • ¾ cup Lifeway Kefir Plain, shaken well first
  • ¾ cup sweetener
  • 1 teaspoon vanilla extract
  • Cinnamon for sprinkling, optional
  • 1 cinnamon stick
Instructions
  1. "Rice" cauliflower with either a cheese grater or by placing florets into a food processor.
  2. Put cauliflower rice into a microwave safe bowl and add ⅓ cup of milk, sweetener and vanilla extract. Microwave for 1.5-2 minutes. Let stand for 10-15 minutes.
  3. In a medium size sauce pan combine remaining milk, cream cheese and cinnamon stick and cook a bit above medium heat. Continually stir until the majority of the cream cheese has melted and the mixture has thickened.
  4. Remove cinnamon stick using fork. Stir in the cooked cauliflower rice until well combined.
  5. Remove from heat and divide the pudding between 5 dishes. Sprinkle additional cinnamon over each dish. Refrigerate 2-4 hours.
