Low Carb Beef Stew

Serves: 6
  • 2 lbs. beef stew meat
  • 4 cups beef broth
  • 1.5 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire
  • 1 small yellow onion, chopped
  • 2 tablespoon garlic, minced
  • 3 medium carrots , cut into 1" slices
  • 4 medium celery sticks, cut into 1" slices
  1. Season beef with salt and pepper.
  2. In a large pot, cook beef in oil over medium heat until brown.
  3. Stir in beef broth, paprika, Worcestershire, garlic and onions. Bring to a boil, then reduce heat to low-medium heat, cover and let simmer 1½ hours.
  4. Add carrots and celery into pot. Cover and simmer for additional 30-45 minutes or until vegetables are tender.
